Salad & KIKU apple

This light summer salad is a great culinary and visual delight.

INGREDIENTS (SERVES 4) 

SALAD

  • Seasonal flowers and wild herbs
  • Roasted and grated walnuts
  • Cooked, chilled KIKU apples in anise syrup
  • Jerusalem artichoke chips
  • Carrot chips
  • Fresh Caprino cheese coated for 24 hours in pear flour
  • Raspberry dressing (fresh raspberry juice, apple cider vinegar, salt, juniper powder, grape seed oil)

 

 

PREPARATION

SALAD

Place the salad in a bowl and season it with the dressing, then use it to form a small tower on a deep plate. Add the pickled apple cubes. Place 6 pieces of fresh Caprino cheese on top of the salad and use the raspberry dressing again to refine it. Scatter the grated walnuts on top. Serve with the salted Jerusalem artichoke chips and the carrot chips.
